Smoked Tuna On Cauliflower Rice

Smoked Tuna on Cauliflower Rice and some nice cheeses.

One of the fears of the Keto lifestyle is falling into atkins on accident. This is why I love eating fish. They're so much fattier than many of the other available proteins and fish is so very versatile. If you happen to be of the mind that strict, specific diets are for those with extra money I implore you to find some delicious frozen fish. 

The tuna pictured here started as frozen caught tuna steaks. 

Place the frozen tuna steaks in a metal cook plate and line it with tin foil to help clean up the mess.
Sprinkle with olive oil and add your favorite spices, when using a traeger there's no such thing as too much salt.

With a bit of seasoning and the use of my favorite machine, the Traeger. I was able to turn these pink stones into delicious tender smoky treats that I have been eating in various combinations for the last few days.

Find these in the frozen food section of your local Trader Joe's

My other favorite aspect is the riced cauliflower. There are many recipes online for how to do this yourself, but I have always mangled those and therefore I have been more than happy to buy them already done for 2$ at Trader Joe's.

What you Need:
Cauliflower Rice
Frozen or Fresh Tuna Steaks

Recipe:
Preheat your oven or Traeger to 350F 
Line a cooking dish with tin foil
Arrange your Tuna Steaks and then drizzle with olive oil and your favorite spices.
Cook for 30 minutes.

On your stove top heat oil and then add the desired amount of cauliflower rice.
Cook the moisture out and add some garlic powder to add some flavor.

Combine and enjoy!

Day 1 - Snack - Keto Soft Pretzel

I don't know what it is about bread. Historians talk about the invention of bread as a dynamic step forward in the progress of man. I liked using it to make sandwiches. While I didn't use it to move humanity forward, I do find myself missing it and all of it's delicious offspring on keto. Enter this little treat. The recipe for the Keto Soft Pretzel can also be used to make little pitas, pretzels dogs or whatever you like to have wrapped in dough.

What you need!

1 1/2 cups shredded mozzarella
¾ cup almond meal/flour
1 tsp xanthan gum
2 tbs cream cheese
2 eggs (one for dough, one for egg wash)

Process
Preheat oven to 400 degrees.
Line a sheet pan with parchment paper.
Combine Mozzarella and Cream cheese in microwave safe bowl and microwave until all is melted and you can stir it into one sticky mixture.
In a separate bowl, add almond meal, 1 egg and xanthan gum. Mix until combined. Add the hot cheese to the almond mixture and work the to into each other. 
Mix the concoction until it is consistent then portion it into 4 dough balls on your parchment paper.
Rolls those balls like a play-do snake and then shape them into your favorite pretzel shape.
Beat your remaining egg in a small bowl and then brush it over your creations.
Bake for 15 minutes then remove.
Add your seasonings. Salt and rosemary work very well together if you're going savory, cinnamon and xylitol if your looking for something that feels a bit more like desert.


Day 1 - Breakfast - Baked Egg in Avocado

The delicious yet simple results.

I like my meals simple. Few ingredients, simple process and great results. The Baked Egg in Avocado checks off all of those boxes for me. What's even better than that, is that you can easily buy groceries for the whole week and plan to have this meal every day.

What you need

Eggs
Avocados
Your favorite spices (I've been on a cumin kick lately, but salt and pepper will do just fine)

The Process

Preheat your oven to 350 degrees Fahrenheit. 
Slice your avocado in half and remove that giant seed.
Crack and egg and carefully drop it into your avocado crevasse.
Spread your favorite spices on top of your avocado halves and place on a cooking dish.
Spritz a bit of olive oil on top of your creation and pop it in the oven.
Bake in the oven for 17 - 25 minutes depending on how runny you like your yoke.
